It's not about this woman's choice of belief - it's about the fact that it affects other people negatively in her government funded job. If she was just some ordinary fundamentalist Christian who refuses to accept that homosexuality is perfectly natural on her own time then there wouldn't be a problem...

That was my take on it. What about the whole separation of church and state? Is that a factor in the UK? She is being paid by the government to do a job and is now refusing due to her personal, religious beliefs.
