Moroccan Beef Kefta On Skewers With Chopped Vegetable Salad

The Stuff

Serves 6

1 1/2 pounds ground beef

1/2 cup grated onion

2 cloves garlic finely minced

2 tablespoons finely-chopped fresh parsley

1 teaspoon fresh mint finely chopped

salt to taste

Freshly-ground black pepper to taste

1/2 teaspoon ground cumin

1/2 teaspoon Spanish paprika

1/4 teaspoon cayenne pepper

Chopped Vegetable Salad

1 seedless cucumber -- peeled, diced fine

1 large tomato -- seeded, diced fine

1 green bell pepper -- seeded, diced fine

1 hot Italian-style pepper -- seeded, diced fine

1 small onion diced

2 clove garlic -- finely minced

1 tablespoon finely chopped fresh mint

1 lemon


What to do .....

In a large bowl combine the beef, onion, garlic, parsley, coriander, mint, salt, pepper, cumin, paprika and cayenne. Cover and let sit for one hour. Soak 12 wooden skewers in water for one hour. or use metal skewers

In a separate bowl combine cucumber, tomato, bell pepper, hot pepper, garlic, mint, Onion, Lemon juice, salt and pepper tossing to combine. Cover and let marinate at room temperature until ready to serve.

Preheat grill or broiler.

Dip hands into a bowl of water. Shape and pack about a 1/3 cup of the meat mixture into 2 sausage-shapes on a skewer. Repeat procedure for remaining meat and skewers.

Grill the keftas on both sides until cooked through, about 3 to 4 minutes per side. Serve hot with chopped salad. and a Flat bread of your choice .....I also use a Dipping sauce for the keftas .....last night i used a Jamaican steak sauce ..... But you can use anything ...

This is one of my fave recipes.... :plate: :plate: :plate:

ps the keftas can break up easy when turning on the grill ....just be gentle :)

I feel like kilo! they look delicious - there's a proper Turkish kebab shop near here that does stuff like it, and I'd happily pay for stuff like that too.

Now that looks damn tasty! I wish my bbq was bigger. I am missing my old one! :(

I loved Ya old BBQ Sky ...... I just have a little cheap one myself from home depo and it does the Trick .......oh and i have one a neighbor threw out ....so I have 2 little ones ......:D

i just wrote down everything i need for this. I'm getting groceries tomorrow after work and we're doing this Wednesday for sure girl. the pictures of this dish are just too compelling Aja.

We made these last night. They were wonderful. We overcooked the meat by about 2 minutes. We'll do them again Aja. It went over big with my husband.

So Glad U enjoyed them :) Did U use a dipping sauce too ??? and they are easy to overcook ... :(

I have tons of new stuff to post ..... I must pull my finger out ......

i did not have a dipping sauce in the house to use. If you have any recipes for dipping sauce for this type of cuisine I'd love it if you'd post one. We did well with them, they didn't break, not a one! Just for yuks I used a lime instead of the lemon for the salad and it was great. I'm doing them again because we lurved them.
