Well, my mom gave me a great little cookbook (I love cookbooks) and I was flipping through it and a I saw a recipe for "Vegetable Oven Pancake". Looking at the picture I said "Hmmm...that looks like Yorkshire pud to me". So I figured I'd give it a chance.
I followed the recipe to the letter (sans vegetables in the middle) and eureka! Yorkshire pudding. I got some bisto, some mash and some meat and piled it all in the center. Hubby had three servings because it's been two years since he's had a proper one and he
I'd thought I'd share the recipe with you. I'll also tag on the vegetable part as that looks quite yummy and we're going to try it soon.
Yorkshire pudding
1 tsp butter
1/2 cup all-purpose flour
2 eggs, beaten
1/2 cup milk
1/4 tsp salt
Place butter in a 9-inch pie plate; heat in a 450 oven until melted. Carefully tilt pan to coat bottom and sides. In a bowl, beat the flour, eggs (already beaten seperately), milk and 1/4 tsp salt until smooth. Pour into pie plate. Bake for 14-16 minutes or until puffed around the edges and golden brown.

VEGETABLE OVEN PANCAKE
2 cups fresh broccoli florets
1 cup chopped green pepper
1 cup tomato
1/2 cup chopped red onion
2 TBS water
1/8 tsp pepper
1/4 tsp salt
1-1/2 cups (6 oz) shredded cheddar cheese
In a skillet, cook the broc, green peppers, tomato and onion in water for 8-10 mins or until crisp-tender; drain well. Add pepper and 1/4 tsp salt. Sprinkle 1/2 cup cheese over pancake; top with veggies and remaining cheese. Bake 3-4 mins longer or until cheese is melted. Cut into four wedges; serve immediately.
