Leek and Potato soup

Another veggie recipe from "The Vegetarian 5-Ingredient Gourmet".

Leek and Potato Soup

2 TBS non-hydrogenate margarine
3-4 medium/large leeks, white and palest green parts only, chopped and very well rinsed
6 large potatoes, peeled and diced
2 vegetable bouillon cubes
1-1.5 cups 1% low-fat milk or soymilk as needed.

1. Heat the margarine in a soup pot. Add the leeks and saute over low heat, stirring often, until they are wilted, 8-10 minutes

2. Add the potatoes, enough water to cover and the bouillon cubes. Bring to a simmer. Cover and simmer gently until the potatoes are very tender, 25-30 minutes

3. Remove 2 cups of potatoes with a slotted spoon and mash coarsely (I actually removed 4 cups). Return to the soup pot and stir in enough milk to achieve a medium-thick consistency. Season with salt and pepper. If time allows let the soup stand off the heat for an hour or two to develop flavor. Make sure to reheat.

It really was great and easy not to mention cheap. It will make a lot, which you can freeze for later or you can cut the recipe down.

I like the idea of making a big batch and freezing the rest for later. What's the difference if you make a big amount or smaller? You still have to get groceries, do the prep, etc., so if you've got freezer space, go for it.

:lol: Fair enough but I hate canned leek and potato soup. It has no flavor at all to me.

i made this tonight and it was really really nice, mine was the same as skys recipe only with a bit of garlic. it was the first soup i've ever made but definitely not the last :)

The garlic sounds like a good idea luke. I will have to give it a try. It's still not cool enough here to make soup but you can be sure I will be soon!
