Ok this is a teaser and right now pics only .....I promiced Sky ages ago I would post this .....so if I put the pics up ..... Then I will do recipe tomorrow .....It took me years to get this right Sky and I hope u enjoy .... when I post the recipe tomorrow after work :)

So sorry for the delay ......Its been a manic week ......OK this recipe may sound like it has lots of stuff in it ......But every kitchen should have most of this stuff in it :) OK this recipe took me years to get how I wanted it to taste .....its not done in an original Indian way .....but please try it ...... I am sure U will enjoy :)

Ajas Chicken Korma


2 1/2 or 3 pounds of chix breast cubed

3/5 garlic cloves chopped

2 large onions chopped

5 green serrano chillis or small handful of Thai chillis chopped

1/4 cup of ghee or oil

1 and 1/2 cups of plain yogurt

10/12 strands of saffron
8 green cardamons crushed
4 cloves
heaped teaspoon of turmeric
heaped teaspoon of ginger
cinnamon stick
salt and pepper
2 cups of chicken broth (I use chix oxo)
1 pack of creamed coconut
handful of almonds Grated or otherwise ......

cilantro to make pretty :)

I find it easier to get all spices i need on a plate ....

ffs this recipe has been a pain in the ass i lost half of it .. where was I oh yeah get all stuff on a plate its easier ...grrrrr

Brown chix in the ghee or oil ...and remove

Add onions and garlic to ghee or oil and saute

Add all spices stir for one min

add chix stir for one min

Add yogurt stir one min

add chic broth bring to boil and simmer for 20 mins

add creamed coconut either grated or in block and almonds and simmer for 10 mins

let thicken ....... ps all the time u are stirring keep tasting and and add more spices if u think ness :)

and serve with white rice cooked with crushed red peppers and a naan bread and chutneys of your choice

and most of all enjoy :D oh and add chopped cilantro on top of chix :)

that's a tasty sounding concoction!

The only thing I can suggest to make the best is that the rice is basmati, perhaps boiled with herbs for that extra taste.

I'm hungry now.

U bastard i have a great recipe for basmati rice .....i will give u another day ..I am knackered now :)

That looks sounds so wonderful Aja. I know one of the first meals I'm going to make when we're settled in our new home will be this one!

Umm, Aja? When are you going to write a cookbook? I love ones with a picture of each recipe and straightforward instructions ---- I think you've got what it takes!
