Easy fudge

Whatcha need:

1 1/2 cups sugar
2/3 cup (5 oz) Evaporated milk
2 tablespoons butter or marge
1/4 teaspoon salt
2 cups miniature marshmallows
1 1/2 cups (9 oz) semi-sweet chocolate chips
1 teaspoon vanilla extract
(1/2 cup chopped pecans or walnuts optional)

Whatcha do:

Line an 8 in square pan with foil

Combine sugar, evap. milk, butter and salt in a medium saucepan. Bring to a full rolling boil over medium heat, stirring constantly. Boil, stirring constantly for 4-5 mins. Remove from heat.
Stir in marshmallows, morsels, vanilla extract (nuts). Stir vigorously for 1 minute or until marshmallows are completely melted. Pour into prepared baking pan. Refridge for 2 hours or until firm. Lift from pan, remove foil and cut into pieces.

I believe that if you eat it standing up or walking around the house, it might actually have a negative calorie effect! :D

I think if you avoid adding the extras such as marshmallow and chocolate you can create what's known as "tablet", a traditional Scottish sweet (which I hate!).

The marshmallows you cannot even taste and fudge is still nice and creamy. It is just added to make it smoother.

I'm sure it is nice for sure - but this tablet stuff is pretty much like eating a lump of sugar. People export it to ex-pats which always amazed me till I found out that evaporated milk isn't widely available (probably because it's not the 1940s!).

Yeah, I don't think this recipe would be very good without evaporated milk. I didn't realize that's not widely available. I got it in London for cooking. I'd have no idea what to substitute for it :grr:
